  • 2 Tablespoons butter or olive oil
  • 4 ounces mushrooms, thinly sliced
  • 2 Tablespoons finely minced shallot or onion (optional)
  • 1 clove garlic, finely minced

For Thickening

  • 3 Tablespoons gluten-free flour or cornstarch (can use regular flour if not gluten-free)

Liquids and Seasoning

  • 2 cups vegetable broth or beef broth
  • 1 Tablespoon low-sodium gluten free tamari (or soy sauce, or coconut aminos)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon dried sage
  • 1/8 teaspoon dried rosemary


Instructions

  1. Heat Fat: Add your choice of butter, drippings, or olive oil to a large skillet over medium heat to warm the fat.
  2. Brown Mushrooms: Add the sliced or minced mushrooms and shallots or onions to the skillet. Cook for 10 minutes, stirring regularly until the mushrooms are browned and the onions are softened. Add the minced garlic and cook for 1 more minute.
  3. Add Flour: Sprinkle the gluten-free flour or cornstarch over the mushroom mixture and cook for 1 minute, stirring to toast the flour and remove any raw taste.
  4. Build Flavor: Pour in the vegetable or beef broth along with 1 tablespoon of tamari. Add salt, black pepper, dried sage, and dried rosemary. Stir well, scraping up any browned bits stuck to the pan to add depth of flavor.
  5. Thicken: Stir continuously over medium-low heat and simmer gently for 10 minutes until the gravy thickens to desired consistency.
  6. Taste & Adjust: Taste the gravy and adjust seasonings if needed by adding more tamari, salt, pepper, or herbs. Serve warm over mashed potatoes, plant-based meats, or your favorite dishes. Store leftovers in an airtight container in the refrigerator for 3 to 4 days.

  • This mushroom gravy is naturally gluten-free and vegan when using olive oil and gluten-free flour or cornstarch.
