Shrimp and Sauce

  • 2 tablespoons unsalted butter
  • 6 large fresh tomatoes
  • 3 cloves garlic
  • 1-2 tablespoons soy sauce
  • 1 chili pepper (mild or as preferred)
  • Salt to taste
  • A handful of fresh flat leaf parsley


Instructions

  1. Cook Spaghetti: Bring a large pot of salted water to boil and cook the spaghetti according to the package instructions until al dente. Drain and set aside, reserving some pasta water if needed.
  2. Prepare Sauce Base: In a large frying pan, melt the unsalted butter over high heat. Add chopped fresh tomatoes and cook for 3-4 minutes, stirring occasionally. Add a few tablespoons of water if the mixture becomes too thick.
  3. Add Aromatics: Peel and thinly slice the garlic cloves. Wash and slice the chili pepper. Add both to the pan with the tomato sauce and cook for an additional 5 minutes, allowing the flavors to meld.
  4. Add Shrimp and Season: Stir in the pre-cooked shrimp and finely chopped fresh parsley. Pour in the soy sauce and mix well. Cook for 4-5 minutes until the shrimp are heated through. Taste the sauce and season with salt as needed.
  5. Combine and Serve: Add the drained spaghetti to the pan with the sauce and toss to combine thoroughly. Serve immediately while hot.

  • Use pre-cooked shrimp to save time; fresh shrimp can be cooked directly in the sauce if preferred.
