Description

A flavorful and hearty Southwest Breakfast Casserole featuring spicy chorizo, tender potatoes, and melted Colby Jack cheese, perfect for a satisfying brunch or breakfast gathering.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 lb chorizo
  • 10 eggs
  • 1 1/3 cups milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (4 oz) can diced green chiles, drained
  • 2 1/2 cups Colby Jack cheese, grated
  • 1 (28 oz) bag frozen potatoes O'Brien (with peppers and onion)

Garnish

  • Cilantro or parsley, finely chopped, for serving (optional)

Instructions

  1. Preheat and Prepare Dish: Preheat oven to 350°F and grease a 9x13-inch baking dish with nonstick spray. Set aside.
  2. Cook Chorizo: In a skillet over medium-high heat, heat the olive oil. Add chorizo and cook, breaking sausage apart with a spatula or wooden spoon, until the meat is cooked through and somewhat crispy, about 7-8 minutes. Remove from heat and set aside.
  3. Mix Egg Mixture: In a bowl or large liquid measuring cup, whisk together eggs, milk, chili powder, dried oregano, salt, and black pepper until well combined. Then whisk in drained green chiles. Set aside.
  4. Layer Ingredients: Spread the frozen potatoes O'Brien evenly in the prepared baking dish. Top the potatoes with cooked chorizo, then sprinkle 1 1/2 cups of grated Colby Jack cheese over the top.
  5. Add Egg Mixture: Pour the egg mixture over the layered ingredients, spreading it to cover evenly.
  6. Add Remaining Cheese and Bake: Sprinkle the remaining 1 cup of Colby Jack cheese on top. Bake in the preheated oven until the cheese is melted and the eggs are set, about 45 minutes.
  7. Rest and Serve: Allow the casserole to rest for 5 minutes before slicing. Garnish with finely chopped cilantro or parsley if desired, then serve and enjoy!

Notes

  • Ideal for a weekend brunch with family or friends.
  • To make it spicier, add extra chili powder or diced jalapeños.
  • For a milder version, substitute chorizo with mild sausage.
  • Ensure potatoes are fully thawed for even cooking or increase bake time if using frozen directly.
  • Can be prepared a day ahead and refrigerated; bake fresh before serving.
