  • 2 Tablespoons Kosher Salt

  • 2 Cloves Garlic (minced)
  • 2 Tablespoons Fresh Rosemary (or a combination of herbs)

Instructions

  1. Prepare the Potatoes: Peel and chop the Yukon Gold potatoes into even-sized pieces to ensure uniform cooking. Rinse them briefly under cold water.
  2. Parboil the Potatoes: In a large pot, bring water to a boil and add the baking soda and kosher salt. Add the potatoes and parboil them for about 10-15 minutes until just tender but not falling apart. Drain thoroughly.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C) to get it ready for roasting.
  4. Season and Coat the Potatoes: Toss the parboiled potatoes in vegetable oil, minced garlic, fresh rosemary, and kosher salt. Make sure each piece is well coated with the oil and herbs.
  5. Roast the Potatoes: Spread the potatoes out on a baking tray in a single layer. Place in the oven and roast for about 75 minutes, turning occasionally to ensure even browning and crispy edges.
